Ingredients
  

  • 1 lb kielbasa sliced into 1/2-inch pieces
  • 1.5 lbs Yukon Gold potatoes cubed
  • 1 bell pepper sliced
  • 1 small onion sliced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Line a baking sheet with parchment paper or lightly grease it.
  • Slice kielbasa into 1/2-inch pieces.
  • Cube potatoes into 1-inch pieces.
  • Slice the bell pepper and onion.
  • In a large bowl, toss potatoes, bell pepper, and onion with olive oil, smoked paprika, garlic powder, salt, and pepper.
  • Spread the mixture evenly on the baking sheet.
  • Add kielbasa slices, ensuring they are evenly distributed.
  • Bake for 25-30 minutes, stirring halfway through, until potatoes are tender and golden.
  • Garnish with fresh parsley before serving.
