Ingredients
  

  • 1 lb lean ground chicken 93% lean
  • 1/2 cup breadcrumbs or crushed saltines
  • 1 egg
  • 1/4 cup minced onion
  • 2 cloves garlic minced
  • 1 tsp dried thyme
  • 1 tsp smoked paprika
  • 1 tbsp soy sauce
  • 2 tbsp ketchup
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Chill your hands and a mixing bowl in the fridge to keep the ingredients cold.
  • Pat the ground chicken dry with paper towels to remove excess moisture.
  • In a large mixing bowl, combine breadcrumbs, minced onion, garlic, thyme, smoked paprika, salt, and pepper.
  • Add the ground chicken, soy sauce, egg, and ketchup to the mixture.
  • Gently mix the ingredients using a spatula, folding instead of stirring to maintain texture.
  • Line a baking dish with parchment paper for easy cleanup.
  • Shape the mixture into a compact loaf, pressing the edges firmly.
  • Brush the top with olive oil and sprinkle with additional paprika if desired.
  • Bake for 45-50 minutes or until the internal temperature reaches 165°F (74°C).
  • Let the meatloaf rest for 10 minutes before slicing to retain juiciness.
